Johan & Nystrom – Sumatra Gayo

Sumatra Gayo, with its rich and musty flavor, is incredibly an affordable coffee and is a perfect ice breaker when you host a “fika” at home. In addition to Sumatra Gayo being a very good coffee, it has been served at the Nobel Banquet since 2012 and certainly next year. I think Sumatra Gayo, along with Bourbon Jungle, is one of the best specialty coffee’s to start with. The taste profile is similar to what many have at home, just like the Bourbon Jungle, it’s well balanced, powerful and musty.

 

Information and recipe for the coffee:

Origin: Indonesia
Variety: Yellow Catuai
Farm: Permata Gayo Cooperative
Region: Aceh, Sumatra
Process: Natural
Altitude: 1300 – 1500 meters above sea level.

Pour Over:

17g coffee (grind setting 20C at Baratza Sette 270, medium-coarse)
225g of filtered water
40g bloom 35 seconds
93 degrees Celsius

1) 40g bloom for 35 seconds, stir with a bamboo stirrer to get all coffee moistened.
3) 225g water in a circular flow (this includes 40g water blooming). This including 35 second blooming, your timing should be on 1 minute and 50 seconds.

Espro Travel Press:

19g coffee (grind setting 26B at Baratza Sette 270)
284g of filtered water
94 degrees Celsius

1) After pouring both the coffee and the water, stir the coffee 10 times. I suggest you use a bamboo stirrer. Avoid sharp objects.
2) Screw the press and let steep for 4 minutes
3) Press slowly, if the press gets stuck, just lift the press and try again. It is normal.
4) Serve or seal the lid.

Review: Coffee with the best story before even touching a drop, to drink the same coffee as the people at the Nobel Banquet is a really fun thing to do. It will create an aha-feel before even tasting it. Sumatra Gayo from Johan & Nyström is a well-balanced coffee with a spicy base.

I have previously said that I like when coffee is either end of the spectrum, then it can be wonderfully enjoyable on its own, but it also has its disadvantages. The well-balanced coffee is a great alternative. A great example is Sumatra Gayo, it’s great for dessert, cookies, on their own and after a meal. It will never amplify the acidity, sweetness or bitterness and is instead a perfect cushion for your palate when you eat something to it. It’s certainly the reason why it’s served on the Nobel Banquet because it can never go wrong.

It can be used with several brewing methods, but of those that I use, Espro always wins. You will get the musty feel clearer, and without a paper filter, it will allow more oils from the brewer all the way to your coffee cup. This coffee is a personal favorite from Johan & Nyström and is always a safe bet!
