Semla season has officially started properly. From semla pastries to the real deal, and nothing is better than a classic one from @malinshembageriorebro.
I called them just before they closed last Saturday. The owner mentioned he had two small buns left and kindly agreed to put together two small semlas for me and my girlfriend, which I really appreciate. I warned him that I might arrive right after closing, but I managed to get there, buy the semlas, and be out the door just before closing time.
Anyway, let us talk about the semla.
This is a classic semla with plenty of cardamom in the bun, lovely cream, and a stronger hint of vanilla than usual. Many people think of vanilla as a plain flavor, but it is actually incredibly complex and more exotic than we realize when you remember which part of the world it comes from.
