LaClara – Castillo Washed

A refined cup from La Clara Coffee Roasters.
This Castillo Washed, produced by Oscar Restrepo at Finca La Divisa in Apía, Risaralda (1,800 m.a.s.l.), brings delicate notes of warm vanilla, roasted nuts, fudge, and sweet citrus.

The coffee undergoes a careful post-harvest process: cherries are shade-rested for 24 hours, fermented anaerobically in water for 18 hours, then washed, dried, and stabilized in hermetic bags for 30 days.
